A Unique Food Journey Beneath the Landscape
Hidden Flavours is a unique collaboration between Marble Arch Caves and Cuilcagh Lakelands Geopark, bringing together the finest local produce and flavours from across the Geopark in an intimate, immersive journey beneath the surface. Over three hours, geology, food, storytelling and music come together to create an unforgettable experience.
This is not a traditional food event. It is a slow discovery – a guided journey through the show cave where every taste reveals another story about the land, the people and their craft.
A Multi-course Tasting Journey
At the heart of the experience is a specially curated multi-course tasting menu, created by award-winning chef John Roche, a member of the Cuilcagh Lakelands Geopark Regenerative Tourism Business Network.
Expect carefully selected local ingredients and produce, transformed into a series of small plates (some dishes are pared with alcoholic beverages/non alcoholic options available) designed to connect flavour with place. Our aim is to bring the hidden flavours of the Heartlands to life.
Beneath the Landscape
As you travel through the remarkable underground world of the Marble Arch Caves, your food journey will unfold alongside stories of geology, farming traditions, local producers and the landscapes that have shaped them.
Discover how time, water and nature have created this extraordinary limestone landscape and how patience, care and tradition have shaped the people and produce of the region.
Along the way, enjoy live music performances that add another layer to this atmospheric and intimate experience, set within a UNESCO-designated landscape.

Event Details – Before You Book
Hidden Flavours is an adults-only experience. Please note that the cave experience involves 154 steps to enter and exit and is not suitable for guests with restricted mobility or those requiring wheelchair access.
The temperature inside the showcave remains at approximately 10°C, and guests will spend around three hours underground. We recommend wearing flat, comfortable footwear and bringing a warm layer or coat.
If you have any concerns regarding allergens or require specific information about the menu, please let us know when booking. Tickets for this event are non-refundable or transferrable. As this event takes place in the Marble Arch showcave this event is weather dependent. A refund may be issued if the event is cancelled due to the weather or cave conditions.

The event has also been developed as a continuation of Burren Bites: ‘A Taste of Time’, and celebrates strong collaborations that exist across the Geopark.
